A flower head will form in the centre of the leaves. This is called a curd. It can be different colours but most of us will be familiar with the white cauliflower. If the cauliflower curd is in too much light it will turn yellow.
Gardeners bend the leaves over the curd to keep out the light and stop this happening.
Although we generally think of cauliflower curds as white, they can also be purplish red, yellow or green.
