Strawberry & White Chocolate Muffins

Ingredients

 

  • 250g fresh strawberries roughly chopped
  • 60g white chocolate roughly chopped
  • 120g caster sugar
  • 2 tblsp. sunflower oil
  • 1 large egg beaten
  • 1 tsp vanilla extract

 

 

Method

 

  1. Place the strawberries in a bowl and add the sugar
  2. Add the white chocolate, sunflower oil, egg, vanilla extract and yoghurt
  3. Stir well
  4. Mix the SR flour and baking powder
  5. Add the flour and baking powder to the other ingredients
  6. Mix well
  7. Spoon into muffin cases (I made 12 but they weren’t very big)
  8. Bake for 20mins Gas mark 7 (fan assisted mark 5) electric 220ºC (fan assisted 200 ºC).

Variation

 

Any berry fruit could be substituted for the strawberries and cut down the amount of fruit if you prefer a drier muffin
